Richard moved to Sydney in 1993.

- l'Hotel, Darlinghurst as Sous Chef for 1 Year.

- Trezzini's in Mosman from 1994 to 1996 as Sous & Head Chef.

-  Tuscany Restaurant in Rozelle from 1996 to 1998 as Head Chef.

- Riverview Hotel Dining Room in Balmain from 1999 to 2001 as Head Chef and Owner.

- Next Food Store & Delicatessen as Chef/Owner from 2001 to 2003.

- Le Kiosk Restaurant & Function Centre in Manly from 2003 until May 2005 as Executive Chef.


a'Mews Restaurant is Richard's third venture to bring together the experience & knowledge gained over the last 20 years.
